Domino Light Review and Twitter Party!


 I love sugar. I wish I didn't. Recently, I went crazy in the kitchen. I made chocolate pudding from scratch! I've never done that before and I was so giddy with excitement when I realized how easy it was. I was even happier when I tasted it it. I made it with Domino Light and my husband and kids couldn't tell the difference. I couldn't either, and I can always tell when somebody sneaks something into or out of a dish. I followed the recipe that was provided in my package. I skipped the whipped cream. My heavy cream disappeared (thanks to my husband) and I didn't get to try it!

Light Chocolate Pudding & Whipped Cream


Ingredients List

1/4 cup plus 1 Tbsp. - Domino® Light

1/4 cup - unsweetened cocoa powder

1/4 cup - cornstarch

2 cups - 1% milk

1 tsp. - vanilla extract

Whipped Cream

1 cup - heavy cream

1 to 2 Tbsp. - Domino® Light

1/2 tsp. - vanilla extract

Instructions

In a small saucepan, whisk together all dry ingredients. Whisk in milk, 1/2 cup at a time, until combined. Place over medium heat, and continue to whisk until the pudding becomes thick and begins to bubble. Remove from heat and whisk in vanilla. Pour into medium-sized bowl or individual serving bowls. Place a piece of plastic wrap on the surface to prevent a skin from forming. Chill for at least 2 hours. Serve with fresh whipped cream.
Serves 4.

Whipped Cream: In a large bowl, whip cream with an electric mixer on medium speed until soft peaks are just beginning to form. Add Domino® Light and vanilla; increase speed slightly until stiff peaks form.

Quick Tip

It's always best to use a chilled metal bowl when making whipped cream. Place your bowl in the refrigerator a few hours before you use it.

I also made a red velvet cake with Domino Light. Mmmmmm! I don't like sweetened hot tea but I tried it with Domino Light anyway. It was ok..I gave my mom some to take home and try.
