All About Pork Publix Special and Giveaway!



I've been eating a lot of pork lately! It's a great part of a balanced and healthier diet. It's good and good for you!!! My dad's ribs are my favorite pork dish, but like most others, I am drawn to the smell of bacon! Bacon alone or wrapping anything (bacon is the best packaging for most food!) is my weakness. Since I am eating healthier, I have skipped the bacon and rediscovered why pork is so wonderful. This four week challenge has taught me great recipes and I am excited to share a few of my latest finds with you!

Tonight, I made something very basic, but oh so good! It took me about ten minutes, start to finish-including prep time! I made Pork Cutlets with my very special Pork Chop Seasoning Blend from Penzeys. The seasoning contains salt, granulated garlic, white pepper, onion, ginger, and natural hickory smoke flavor. I simply dusted the cutlets with the seasoning and heated a few tbsp of olive oil in a cast iron skillet. When the oil was hot, I put my cutlets in the pan and turned them when they were done on one side. I inserted my new meat thermometer and removed my cutlets when they reached 145 degrees. I let them rest and then we enjoyed them!

Grilled Thai Tenderloin Cutlets

Times:

Prep Time: 15 minutes prep, Cook Time: 10 minutes cook

Ingredients:

2 Pork Tenderloins

2 tablespoons fresh garlic, minced

2 tablespoons fresh ginger, grated

1/3 cup soy sauce

1 tablespoon garlic chili paste

2 tablespoons fresh mint, minced

sandwich buns, (optional)

Cooking Directions:

Cut tenderloins crosswise into 1-inch pieces; flatten with heel of hand to about 1/8-inch thickness and place in shallow pan. Combine remaining ingredients and pour over pork cutlets; cover and refrigerate for up to four hours. Remove pork from marinade (discard remaining marinade) and grill over medium-hot coals just until nicely browned; about 2-3 minutes per side. Serve on sandwich buns if desired.

Serves 10.

Serving Suggestions:

The versatility of pork tenderloin makes it the perfect centerpiece for an outdoor meal. These cutlets add an exotic touch to your patio dinner. Serve on buns along with Sesame Cucumbers.

Random Safety Tip:

Cover a plate with plastic wrap to carry pork to the grill. Throw away. Use the clean plate carry food back in!
